ocrの言語データファイルを用いて日本語の認識を行いたいのですが、どのファイルをインストールすればいいですか？
またインストールした後のデータファイルの使い方も同時に知りたいです。

こちら にあります。
txt = ocr(img,'Language','Japanese');
でいけそうですね。
